Rosemary Jam-Filled Thumbprint Cookie Recipe
Ingredients
- 1 stick softened salted butter (1/2 cup)
- 2/3 cup brown sugar
- at least 1 tbsp dried rosemary
- sea salt
- 1 egg + 1 egg yolk
- 1 tsp vanilla extract
- 2 1/3 cup flour (1:1 gf flour also works)
- jam of your choosing (plum and fig are my favorites but apricot is also pretty good)
Directions
- Cream butter + sugar till combined.
- Add rosemary, salt, eggs, and vanilla. Mix till combined.
- Add flour slowly. Do NOT overmix.
- Scoop about 1tbsp of batter + roll balls into hand.
- Make print mark (either with thumb or back of spoon) in each.
- Fill with jam of choice.
- Bake for 12-13 minutes.
- Sprinkle a little sea salt on each while they set (optional) + enjoy!!!
